Another Super Bowl is upon us and once again we will be watching the ageless Tom Brady fire pigskins into people's chests and most likely win another ring....SO exciting...seriously, can't wait to see what Giselle is drinking this year. I wonder if there's a Vegas bet on how many times they are going to show her this Sunday. Not trying to be a hater but, well... yeah I guess I am a hater... of the Patriots. Bitter Bears fan right here.
There is something you can be excited about though! Your last Sunday indulging in gut exploding pub fare! I realize that a lot of people make New Year's resolutions to clean up the diet. Which is why I've made a contribution for you to enjoy one of my favorite Sunday Funday dips without feeling so bad about it. This is my "Not So Bad For You" Buffalo Chicken Dip.
I see a lot of recipes out there for "skinny" dip or "healthy" dip and to be honest I don't care for either of those overused terms. Eating this dip is not going to make you skinny, but it's not going to make you fat either. Side bonus for you carb counters, it only has 2.8 g preserving. I'm not one to toot my own horn, but you most likely won't be able to tell much difference in taste with this dip compared to the Buffalo chicken dip that has a pound of cream cheese in it. This recipe is similar to others out there, except I'm a fancy pants and used Gorgonzola. Feel free to substitute blue cheese instead of its Italian counterpart.
So let's interlock arms this Sunday, root against the Patriots and bet on the over/under of how many times we will see Giselle during the game. I say over 3 times. Happy Sunday Funday friends!
Prep Time: 5 minutes Cook Time: 30 minutes
Serving Size: 5-6 people
20 oz- Canned chicken breast
2 ounces- Neufchatel Cheese
1/2 cup- 2% Shredded Mozzarella cheese
1/2 cup- Non-fat Plain Greek Yogurt
1/4 cup- Gorgonzola Crumble (2 tbsp for garnish if desired)
1/4 cup- Frank's Hot Sauce
1 tsp- Ranch seasoning packet
3 stalks of thinly sliced green onion for garnish
1.) Preheat oven to 350 degrees
2.) Mix all ingredients except green onion into a large bowl, save some Gorgonzola for garnish is desired and transfer ingredients to a baking dish.
3.) Spread evenly in baking dish ( 9 x 9 if possible) in the oven for 30 minutes or until desired color on top is reached and remove from the oven.
4.) Garnish with cheese crumbles and green onion and serve with tortilla chips, celery, or pita.
